    Old Fashioned Coconut Ice

    • 150 grams coconut oil
    • 2 teaspoons Heilala Pure Vanilla Paste
    • Pinch pink salt flakes
    • 250 grams shredded coconut (not desiccated)
    • 400 grams icing sugar
    • 1 egg white
    • 1-2 drops pink food colouring (optional)

    Old Fashioned Coconut Ice

    1. Place coconut oil and vanilla bean paste a microwave safe bowl and melt for around 30 seconds on high.
    2. Place remaining ingredients except colouring into a large mixing bowl. Add the melted coconut oil and mix vigorously until all is combined.
    3. Press half the mixture into the base of the tin or mould you are using pushing down to smooth the surface as necessary.
    4. Add colouring into the remaining mixture in the bowl and mix until evenly coloured.
    5. Press on top of the white mixture and refrigerate several hours until solid.
    6. Use a hot knife to cut into cubes. Serve cold. Keep refrigerated.
