    Oatmeal Breakfast Cookies

    • 1 large packed cup pitted dates
    • 1/3 cup boiling water
    • 1 egg
    • 3 Tablespoons  Heilala Vanilla Syrup
    • 3 Tablespoons coconut oil, melted
    • 1 teaspoon  Heilala Pure Vanilla Powder
    • 1 ¼ cups rolled oats
    • ½ cup flaked almonds
    • ¼ cup desiccated coconut
    • ½ cup sunflower seeds or chopped nuts of your choice
    • ¼ cup raisins
    • ¾ cup almond meal
    • ½ teaspoon baking powder
    • ½ teaspoon cinnamon

     

    Oatmeal Breakfast Cookies

     

    1. Pre-heat oven to 180°C. Line a tray with baking paper.
    2. Roughly chop dates. Place in bowl, pour over boiling water. Cover and leave to soak for 10 minutes then mash to a paste.
    3. Add Vanilla Syrup, Coconut Oil, lightly beaten egg and Vanilla Extract and mix to combine.
    4. Add dry ingredients (Oats, almonds, coconut, sunflower seeds, raisins, almond meal, baking powder & cinnamon) and mix together until well combined to a thick batter.
    5. Measure out heaped tablespoons of mix and shape to a thick flattened round.
    6. Place on lined tray and bake 20 minutes until golden.
    7. Remove from oven, leave to cool on tray.
    8. Keep for 5 days in an airtight container.
