Light and fresh summer fruit salad with a creamy vanilla yoghurt dressing.
10 Oranges
1 Handful Mint Leaves
3 tsp White Sugar
2 Tbsp Cointreau (optional)
1 Cup Natural Greek Yoghurt
1 Heilala Vanilla pod split and scraped or 1tsp Heilala Vanilla paste
Zest of 1 Orange
Cut the tops and bottoms off the oranges, and then cut the skin off with a sharp knife. Standing the oranges up right, slice downward into bite size segments. In a large bowl mix sugar through orange segments and add the mint that has been torn or chopped roughly to release some of the flavour and aroma, add cointreau if desired.
In a smaller bowl mix Vanilla seeds or paste with yoghurt and orange zest.
In individual bowls drizzle yoghurt over the orange and mint salad to serve.
